Hi everynoe! This is eggplant day!
I call it as “eggplant salad” but you can name it whatever you want; eggplant-tomato salad, eggplant squash etc.
What you need (for 2 people):
5 middle eggplant
3 middle tomatoes
½ bunch parsley
Pomegranate syrup or some lemon water
This salad is goes well with meat, soup, chicken kidney or with other meats. However I like eating it as alone or sometimes with yoghurt.
How to cook?
First, you must decide how much you need to cook? I will give you number for that. Five middle eggplants is good for three middle tomatoes. You need an oven or a barbecue to cook them but not a microwave. (I suggest you not to cook in microwave if you don’t have to. Because the microwave heats the meals up in a very short time and faster than a normal stove.)
Now the vegetables are ready to cook.
If you cook them on the barbecue:
Heat the barbecue up. Lie the eggplants and tomatoes (if you want add some green pepper) on the barbecue. When you see steam comes out of the eggplants, it means they are ready to peel. Do not wait a lot for tomatoes. When you see their skin are soften, get them and peel. But first, wait them to get cold, if not your hands burn a lot
After peeling, put the eggplants in a deep vessel and squash them. İf you squash good, they will be delicious Do the same thing for tomatoes, but be careful. Because tomatoes leave a lot water. (Do not pour this water. Tomao water gives good taste to your salad if you add this into it.)
Now prepare some parsley and cut it into pieces. Then add it into your salad. I add pomegranate syrup as a sauce and olive oil; also some salt. If you dont’t have sauce, add lemon water, it has a good taste.
Eggplant salad is ready to eat now! Enjoy!
